Onyx Fried Chicken

There's absolutely no reason that healthy food shouldn't also be delicious. Here is one of my favorite protein packed recipes that you can eat by itself, with grilled veggies,add to a wrap or a great salad. It's very easy to prepare, only needs simple ingredients and can be knocked out in under 10 minutes.

So here I give to you.....OFC- Onyx Fried Chicken

First prepare the bread crumbs. For 1 pack of chicken I use about 2 slices of Ezikiel bread, very slightly toasted. Throw them in a blender/food processor and blitz 'em up.

You can add a hefty serving of spices to this mix, feel free to to experiment to match your own tastes. I uses garlic powder, pink salt, ground black pepper, lemon pepper, BRAGGS organic spice mix(oregano, basil, thyme) and a little Mexican seasoning.

Use the back of your knife or a meat tenderizer to flatten out the chicken fillets(or breast) until they are very thin. This helps keep the cooking time short and makes the chicken super soft and juicy on the inside.

Fill one bowl with a cup of brown rice flour.

Crack 2 eggs in a bowl with a splash of water and whisk.

Heat a big frying pan and add enough extra virgin olive oil to cover the entire surface of the pan.

First dip the chicken in the flour until fully covered. Then cover it in the egg wash before completely coating with the bread crumb mix. Make sure to pack the bread crumbs on firmly.

Gently lay the chicken in the hot oil and fry on each side for around 2 minutes or until golden brown in color. Once done on each side, lay the chicken on a plate with some kitchen roll to catch any excess oil.

I usually make a bigger batch than I need for one meal and then just reheat in the oven as I need it.

For a low carb option you could serve this with a variety of grilled veggies or a salad. Or you could add this Into a wrap with some spinach/kale as an easy option to take on the go with you.
